This Pistachio Cupcake is perfect for green holidays, pastel holidays, and whenever you’re feeling like a pistachio cupcake would hit the spot. Which around here might just be any day of the year.

Serves: Makes 24.
Ingredients
For cupcakes:
1 box of white cake mix & all ingredients that it calls for
1 box of pistachio pudding mix
1 batch of Vanilla Buttercream Frosting (this one mentioned above from Savory Sweet Life is terrific!)
For white candy/chocolate shavings:
7 ounces weight white chocolate chips
1 teaspoon vegetable shortening or vegetable oil
Instructions
For cupcakes:
Combine cake mix and it’s ingredients as packaging instructs.
Add in pudding mix and combine well.
For cupcakes, fill cupcake liners about halfway full with batter.
Bake as directed on cake mix packaging.
Cool and decorate as you like.
For white candy/chocolate shavings:
Melt chips according to package instructions.
Stir in vegetable shortening/oil until combined well.
Using a spatula, spread melted candy/chocolate thinly on a baking sheet.
Let harden for a few minutes.
Using a spoon, scrape across hardened candy/chocolate to create curls and shavings

Ingredients
1 1/2 oz. Herradura Silver Tequila – (more)
1 dash(es) Lime Juice – (more)
3/4 oz. Melon Liqueur – (more)
Instructions
Shake tequila, melon liqueur and lime juice with ice for 15 seconds. Strain into a chilled martini glass and garnish with a shamrock carved lime.
Its bright green color, sweet flavor and Shamrock-carved lime is sure to bring everyone good luck.

Get your Sassy Leprechaun on!! Feeling both sweet and sassy?? This delish drink has got it all goin’ on – fresh & fruity, with a little kick. Mix 1oz Midori with 2oz sweet & sour mix and 1oz lemon juice. Stir with perfectly green swizzle sticks, and garnish with a slice of orange. Yum!!

Ingredients:
2 whole wheat English muffins
4 oz of cream cheese, softened
1/2 cup shredded Monterrey Jack cheese
salt
12 slices of cucumber
4 thin slices of green pepper
Fresh Parsley (adds great flavor)
Directions:
1. Mix the cream cheese, Monterrey Jack cheese and salt very well. 2. Split the English muffins in half and cut out shamrocks in the muffin halves3. Spread the cheese mixture4. Place 3 cucumbers on each leaf. Use the green pepper slice as a stem. Place a parsley leaf on top of the sandwich.
